The first recipe I am going to share with my Cysters is something I have been making for SO long, that I actually have no clue where I got the idea from. This is a simple meal that I throw together when I’m in a time crunch. The best part is that I get EIGHT servings out of it (which is wonderful for meal prepping), and each serving has 23 grams of protein!
- 4 Medium sized Zucchini, cut into approx. 1//2 inch slices
- 1 lb of 93% lean ground turkey
- 1 Jar of red tomato sauce (24 oz…watch the sodium! I usually get “no salt added” but Mike ran to the store for me, so used what I got! The sodium is quite a bit higher this time than it usually is.)
- 2 Cups of Low moisture/part skim, shredded mozzarella cheese
- 4 tbsp of Braggs Nutritional Yeast Seasoning
- Salt, Pepper, and Italian seasoning to taste
Preheat the oven to 350*. Spray a 9×13 casserole dish with non stick oil spray of your choice.
In a separate pan, cook the ground turkey according to directions, until browned. Add salt, pepper, and Italian seasoning to taste.
While ground turkey is cooking, cut zucchini into approximately 1/2 inch slices.
Next, place a single layer of the zucchini along the bottom of the casserole. Cover that with half of the red sauce, cheese, and ground turkey. Sprinkle 2 tablespoons of the Braggs Nutritional Yeast Seasoning over the top. ***For those of you that haven’t tried nutritional yeast.. I know, it sounds scary. I was also wary when my Mom told me about it. But trust me, it is DELICIOUS (has a cheese-like flavor), and the benefits are out of this world! One serving has an entire days worth of Vitamin B, along with 15 different minerals and 18 amino acids. It is the easiest super food you can eat! I put mine on just about everything, especially popcorn! Yum!***
Repeat last step, making a second layer of all ingredients.
Place in oven and bake at 350* for 35 minutes, or until the zucchini is tender.
Serve, and enjoy!
